Several U.S. processors of nut meats such as almonds, pistachios and macadamias required a processing system to pasteurize these nut products to meet validation requirements for proper log-kill doses of salmonella and other bacteria. The shelf life of these products meant that a fast-track response was required. Because some processing facilities utilize batch processing while others utilize conveyor processing, a one-size-fits-all approach is not feasible; each system is engineered to the specific needs of the customer.
Control of heating and power is critical in the overall process. For batch applications, Chromalox circulation heaters are used in combination with Chromalox SCR control panels to super heat steam within prescribed temperatures to pasteurize the nuts and keep them dry without cooking them. Conveyor applications typically utilize Chromalox duct heaters to achieve the same heating needs. Some applications utilize Chromalox electric-fired boilers in combination with control panels.
